Welcome to Maluhia Kapaa!

We are excited to host you and hope you have a restful, relaxing, and enjoyable visit to Kauai.  Our family has fallen madly in love with the island and have listed some of our favorites below.  Please feel free to leave your notes and suggestions for the next guest here too. Our Family Favorites

Our daughter Vada, 12 Go get shave ice! My favorite flavors are lime, grape, cherry, rootbeer all together.  At the beach -  go on a treasure hunt.  Find unique items and use them in your sandcastle and don’t forget to take pics! At Hanalei, rent a SUP and use it as a first time surfboard (in Hanalei).  My fave excursions are horseback riding to a waterfall or catamaran, canoe/kayaking from Hanalei, and the Smith Family Luau - what a show!  My fave beaches are 1. Anini, 2. Hanalei, and 3. Lydgate. Don’t forget to bring flips and enjoy the downtime. 


Our daughter Riley, 11 Go get shave ice! Everyday! My favorite flavors are lime, blue raspberry, and grape all together.  Go to the beach all day.  My faves are 1. Anini (chill), 2. Hanalei (waves, beauty, sandcastles), and 3. Poipu (for body surfing).  Make sure to check out the cute shops and small businesses, get a sticker for your water bottle, (buy a hydroflask if you don’t have one).  I prefer to just chill on the beach, but some excursions I like are horseback riding to the waterfall and luaus.  When you’re at a good snorkeling beach (Anini is pretty great!) get some fish food.  The fish swarm you and it is magical! Don’t forget your sunglasses and go with the flow. 


Our daughter Stella, 5 I LOVE rainbow shave ice, Anini Beach, Poipu kids beach...to bury my legs in the sand, build sand castles, dig some holes… I also LOVE the hotel pool and the hot tub.

Restaurants

Hukilau Lanai Steps away and a new favorite! Hukilau Lanai has a fantastic menu with lots of dining options - bar, restaurant, lounge.  We fell in love with the gluten-free friendly options including a separate menu and knowledgeable wait staff.  The craft cocktails are delicious and refreshing, the wine list is reasonable and extensive.

Lava Lava Beach Club The only toes-in-the-sand dining on the island! Enjoy a fun atmosphere and incredible views as you sip mai tais out of a coconut. Gluten-free options.

Verde Clean eating in Lihue! Stop here when you’re doing your shopping at Walmart and Costco or on your way out of town. Tons of great options and craft cocktails. Super kid friendly.  Tons of gluten free options and also vegetarian.

Chicken in a Barrel at Coconut Marketplace Easy, delicious barbeque.  Conveniently located next to the Shave Ice shop and with lots of gluten-free options with down-home taste.

Sleeping Giant Grill WOW! This place surprised us. We loved the generous portions and fresh seafood options. A great island lunch or take out and BYOB.

Grilled Pineapple

Ingredients

4 ½” think round slices of pineapple

4 tsp of sugar

1 tsp ground cinnamon

1 tbsp of vegetable oil

Steps

  1. Combine sugar and cinnamon in bowl and mix well
  2. Sprinkle over pineapple slices on both sides
  3. Heat up cast iron grill pan on stove (OR GRILL)
  4. Brush pan or grill vegetable oil 
  5. Place slices on pan or grill for 3 - 4 minutes on each side
  6. Remove and serve immediately 


Our Kauai Smoothie

Ingredients

1 Pineapple

10 Strawberries

1 Starfruit (or other in season fruit from a local farmers market ie mango)

1 cup POG juice

1 cup of ice 

Scoop of vanilla ice cream optional

Steps

  1. Cut off the top of pineapple
  2. Scoop out the insides with a spoon or a knife
  3. Cut off the tops of strawberries and halve them
  4. Combine all ingredients in blender on low, then medium until smooth
  5. Pour mixture into hollowed out pineapple and garnish to your heart’s desire!


Huli Huli Chicken (prep ahead for flavor bomb!)

Ingredients

4 lbs boneless skinless chicken thighs or breasts

12 oz of pineapple juice

½ cup of soy sauce (gluten free available)

½ cup of brown sugar

¼ cup rice vinegar

⅓ cup of ketchup

1 tsp minced fresh garlic

1 tsp minced fresh ginger

1 tbsp worstechire sauce

1 tbsp corn starch

Green onion chopped for garnish 

Steps

  1. Create marinade: mix together all of the ingredients except for chicken, corn starch, and green onion
  2. Set aside 1 cup of marinade
  3. Pour remaining marinade over chicken in a bowl or zippered plastic bag and refrigerate 3 hours to overnight
  4. In a saucepan, combine 1 cup of reserved marinade and cornstarch, stir and heat until thickened 
  5. Discard excess marinade from chicken
  6. Place chicken on grill over medium heat - cook on each side turning several times and brushing thickened marinade on after each turn
  7. Grill until cooked through and glaze has thickened 
  8. Garnish with green onions

*If cooking in oven - bake at 350 degrees for 20 minutes, baste and turn half way


Hawaiian Garlic Shrimp w/ Coconut Rice

Ingredients

Shrimp

1 lb of shrimp, deveined and shell on

10 cloves garlic, minced

1 cup flour or cornstarch

1 tsp paprika

½ tsp cayenne pepper (optional)

1 tsp onion powder

½ tsp salt

½ tsp of pepper

½ cup unsalted butter

¼ cup rice wine vinegar

8 lemon wedges

Rice

1 ½ cup white or brown rice

1 ½ cup water

1 ½ cup coconut milk

Steps

  1. Bring water, coconut milk, and rice to boil in a medium pot
  2. Cover and simmer on low for 20 minutes
  3. Mix flour (or cornstarch), paprika, cayenne pepper, onion powder, salt, and pepper in a shallow bowl, set aside
  4. Melt butter in a large, hot skillet
  5. Add minced garlic and cook for about 3 minutes - do not burn
  6. Add rice wine vinegar and reduce, cooking for another 2 minutes
  7. Coat shrimp in flour (cornstarch) mixture and place side down on the skillet
  8. Cook for 3 minutes on each side (less if using cooked shrimp)
  9. Serve shrimp with rice and lemon wedges


Simple Hawaiian Chicken

Ingredients 

4 - 6 boneless skinless chicken breasts

1 8oz can of crushed pineapple, drained

1 16oz bottle of barbeque sauce

Steps

Place chicken in pot or pan with lid - preheated to medium heat

In a separate bowl mix pineapple and bbq sauce

Pour over chicken breasts

Cook on medium / low heat for 15 - 30 minutes, or until chicken is cooked through

Chop or shred chicken and serve over rice 

*can use this simple recipe for grill too


Easy Aloha Meatballs

Ingredients 

1 1 - 1.5 lb bag of frozen meatballs (*or see below to make your own)

20 oz can of pineapple chunks - juice reserved 

½ cup of packed brown sugar

⅓ cup of apple cider vinegar

2 tbsp of cornstarch

1 tbsp of soy sauce

Steps

  1. Preheat oven to 350 degrees
  2. Reheat or cook meatballs to package instructions
  3. While meatballs are cooking, drain pineapple while saving ¾ cup of the juice
  4. Combine reserved juice, brown sugar, vinegar, cornstarch, and soy sauce in a small bowl and mix well
  5. Pour juice mixture over a skillet and cook over medium heat, stirring constantly until thickened (about 10 minutes) 
  6. Add cooked meatballs and pineapple chunks to the juice mixture, stirring occasionally until heated through
  7. Serve as an appetizer or with rice

To make your own meatballs

1.5 lbs of ground beef

⅔ cup of cracker crumbs 

¼ cup of finely chopped onion

¼ cup of milk

1 large egg lightly beaten

1 ½ tsp of salt

⅕ tsp ground ginger

Combine ground beef, crackers, onion, milk, egg, salt, and ginger in a large bowl, mix well

Shape mixture into rounded tablespoons 

Bake meatballs on a foil lined pan for 15 minutes
